Ingredients
  

  • For the Fritters:
  • 1 can or 1 fresh pineapple, sliced into rings
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying

  • Powdered sugar for dusting
  • Honey or maple syrup for drizzling

Method
 

  1. Prepare the Pineapple:
  2. If using fresh pineapple, peel and slice it into rings about 1/2-inch thick. If using canned pineapple, drain and pat the rings dry with paper towels to remove excess moisture.
  3. Make the Batter:
  4. In a medium bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon (if using).
  5. Add the milk, egg, and vanilla extract to the dry ingredients and whisk until smooth, forming a thick batter.
  6. Heat the Oil:
  7. In a deep frying pan or skillet, heat about 1–2 inches of vegetable oil over medium-high heat. The oil should reach around 350°F (175°C). You can test the temperature by dropping a small spoonful of batter into the oil—it should sizzle immediately.
  8. Fry the Pineapple Rings:
  9. Dip each pineapple ring into the batter, ensuring it is evenly coated.
  10. Carefully place the battered pineapple rings into the hot oil, frying a few at a time (don’t overcrowd the pan).
  11. Fry for 2–3 minutes per side, or until golden brown and crispy. Use tongs or a slotted spoon to flip the rings halfway through.
  12. Drain and Serve:
  13. Once the fritters are golden and crispy, remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
