Ingredients
  

  • For the Fritters:
  • 1 can or 1 fresh pineapple, sliced into rings
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying

  • Powdered sugar for dusting
  • Honey or maple syrup for drizzling

Instructions
 

  • Prepare the Pineapple:
  • If using fresh pineapple, peel and slice it into rings about 1/2-inch thick. If using canned pineapple, drain and pat the rings dry with paper towels to remove excess moisture.
  • Make the Batter:
  • In a medium bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon (if using).
  • Add the milk, egg, and vanilla extract to the dry ingredients and whisk until smooth, forming a thick batter.
  • Heat the Oil:
  • In a deep frying pan or skillet, heat about 1–2 inches of vegetable oil over medium-high heat. The oil should reach around 350°F (175°C). You can test the temperature by dropping a small spoonful of batter into the oil—it should sizzle immediately.
  • Fry the Pineapple Rings:
  • Dip each pineapple ring into the batter, ensuring it is evenly coated.
  • Carefully place the battered pineapple rings into the hot oil, frying a few at a time (don’t overcrowd the pan).
  • Fry for 2–3 minutes per side, or until golden brown and crispy. Use tongs or a slotted spoon to flip the rings halfway through.
  • Drain and Serve:
  • Once the fritters are golden and crispy, remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
  • Add the Toppings:
  • Dust the fried pineapple fritters with powdered sugar and drizzle with honey or maple syrup, if desired, for an extra touch of sweetness.
