Preparation
- Season the boneless, skinless chicken thighs with salt and pepper.
- In a large skillet, melt 3 tablespoons of unsalted butter over medium heat, then add the minced garlic and sauté for about 1 minute.
Cooking
- Add seasoned chicken thighs to the skillet and cook for about 5-7 minutes on each side, until golden brown and fully cooked.
- Pour honey and BBQ sauce over chicken, stir to coat evenly, and let simmer for another 3-5 minutes until sauce thickens slightly.
Assembly
- Remove chicken from skillet, let rest, then slice into strips or shred.
- Warm tortillas and fill each with chicken mixture and your choice of toppings.
- Serve with lime wedges on the side.
Notes
For substitutions, chicken breasts or tofu can be used instead. Keep garlic from burning and ensure the chicken reaches an internal temperature of 165°F (74°C).
