Dumpling Preparation
- In a bowl, mix the flour, salt, and water to form a dough.
- Knead for 5 minutes until smooth.
- Cover with a clean cloth and let it rest for 15 minutes.
Filling Preparation
- Stir together your choice of chopped vegetables and some salt in a bowl.
- Set aside.
Dumpling Assembly
- Roll out the dough on a floured surface until it’s about 1/8 inch thick.
- Cut into small circles using a cup or round cutter.
- Place a teaspoon of filling in the center of each circle, fold over, and pinch the edges to seal.
Cooking Dumplings
- Heat the oil in a non-stick skillet over medium-high heat.
- Fry the dumplings for 3-4 minutes on each side or until golden brown.
- Remove and set on paper towels to drain.
Salad Preparation
- In a bowl, combine the diced cucumbers with rice vinegar, sesame oil, sugar, and a pinch of salt.
- Gently toss to mix.
Peanut Sauce Preparation
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, and honey.
- Add water gradually until desired consistency is reached.
Serving
- Serve the golden dumplings alongside the cucumber salad and drizzle with peanut sauce.
