Ingredients
  

Dumplings
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/2 cup chopped vegetables (carrots, bell peppers, and green beans) Great options for filling.
  • 1 tbsp oil for frying
Smashed Cucumber Salad
  • 2 large cucumbers (diced)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar
  • pinch salt
Peanut Sauce
  • 1/4 cup peanut butter (smooth)
  • 2 tbsp soy sauce
  • 1 tsp lime juice
  • 1 tsp honey or agave syrup
  • Water (to thin)

Method
 

Dumpling Preparation
  1. In a bowl, mix the flour, salt, and water to form a dough.
  2. Knead for 5 minutes until smooth.
  3. Cover with a clean cloth and let it rest for 15 minutes.
Filling Preparation
  1. Stir together your choice of chopped vegetables and some salt in a bowl.
  2. Set aside.
Dumpling Assembly
  1. Roll out the dough on a floured surface until it’s about 1/8 inch thick.
  2. Cut into small circles using a cup or round cutter.
  3. Place a teaspoon of filling in the center of each circle, fold over, and pinch the edges to seal.
Cooking Dumplings
  1. Heat the oil in a non-stick skillet over medium-high heat.
  2. Fry the dumplings for 3-4 minutes on each side or until golden brown.
  3. Remove and set on paper towels to drain.
Salad Preparation
  1. In a bowl, combine the diced cucumbers with rice vinegar, sesame oil, sugar, and a pinch of salt.
  2. Gently toss to mix.
Peanut Sauce Preparation
  1. In a small bowl, whisk together peanut butter, soy sauce, lime juice, and honey.
  2. Add water gradually until desired consistency is reached.
Serving
  1. Serve the golden dumplings alongside the cucumber salad and drizzle with peanut sauce.

Notes

For best results, avoid overfilling the dumplings to prevent breakage. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
