Cooking Steps
- Heat the olive oil in a large pot over medium heat. Add the ground meat and cook until browned, about 5–7 minutes. Break it apart with a spatula as it cooks.
- Once the meat is cooked, add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3–4 minutes.
- Pour in the crushed tomatoes and chicken broth. Stir in the Italian seasoning, and season with salt and pepper to your taste. Bring the mixture to a boil.
- Once boiling, add the gluten-free pasta and reduce the heat to a simmer. Allow it to cook for about 8–10 minutes or until the pasta is tender.
- If you're using ricotta, add it to the pot and stir until well combined. Let it simmer for an additional 2 minutes to blend the flavors.
- Ladle the soup into bowls and top with shredded mozzarella cheese and fresh basil. Enjoy your heartwarming meal!
Notes
For lower-fat options, swap ground meat with sautéed vegetables or plant-based protein. Avoid overcooking gluten-free pasta to prevent it from becoming mushy. If making in advance, consider cooking pasta separately and adding before serving.
