Ingredients
  

Meat and Base
  • 1 pound ground beef or turkey (Halal-certified)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth (Halal-certified)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
Pasta and Cheese
  • 8 oz gluten-free pasta (such as fusilli or rotini)
  • 1 cup ricotta cheese (optional)
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)

Cooking Steps
  1. Heat the olive oil in a large pot over medium heat. Add the ground meat and cook until browned, about 5–7 minutes. Break it apart with a spatula as it cooks.
  2. Once the meat is cooked, add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3–4 minutes.
  3. Pour in the crushed tomatoes and chicken broth. Stir in the Italian seasoning, and season with salt and pepper to your taste. Bring the mixture to a boil.
  4. Once boiling, add the gluten-free pasta and reduce the heat to a simmer. Allow it to cook for about 8–10 minutes or until the pasta is tender.
  5. If you're using ricotta, add it to the pot and stir until well combined. Let it simmer for an additional 2 minutes to blend the flavors.
  6. Ladle the soup into bowls and top with shredded mozzarella cheese and fresh basil. Enjoy your heartwarming meal!

Notes

For lower-fat options, swap ground meat with sautéed vegetables or plant-based protein. Avoid overcooking gluten-free pasta to prevent it from becoming mushy. If making in advance, consider cooking pasta separately and adding before serving.
