  • 3 tablespoons olive oil
  • 4 cloves garlic, minced

  1. Bring a large pot of salted water to boil. Add the gluten-free pasta and cook according to package instructions until al dente—typically about 8-10 minutes. Note that gluten-free pasta can be more delicate, so keep an eye on it!
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to let it brown!
  3. Lower the heat and pour in the heavy cream. Stir well, then slowly mix in the grated parmesan cheese. Keep stirring until the cheese is fully melted and the sauce is smooth.
  4. Transfer the drained pasta into the skillet. Toss everything together, ensuring each strand is beautifully coated in the creamy sauce. Season with salt and black pepper to taste.

Notes

Substitutions: If you prefer dairy-free options, feel free to substitute heavy cream with coconut cream and parmesan with nutritional yeast or a vegan cheese alternative. Always reserve a little pasta cooking water before draining—it can help loosen the sauce if it becomes too thick. Don’t overcook the garlic, as it can turn bitter. Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop with a splash of water or cream.
