Preheat the Oven:
Preheat your oven to 400°F (200°C). If using a skillet, heat it over medium heat on the stove.
Prepare the Glaze:
In a small bowl, whisk together the honey, soy sauce, Dijon mustard, rice vinegar, minced garlic, and ginger (if using). Set aside.
Season the Salmon:
Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper to taste.
Cook the Salmon:
For Baking: Place the salmon fillets on a parchment-lined baking sheet. Drizzle a little olive oil over the salmon and brush it on both sides. Bake in the preheated oven for 12-15 minutes, or until the salmon easily flakes with a fork.
For Pan-Seared Salmon: Heat the olive oil in a skillet over medium heat. Place the salmon fillets skin-side down (if using skin-on) and cook for 4-5 minutes until the skin crisps up. Flip the fillets and cook for another 3-4 minutes.
Glaze the Salmon:
During the last few minutes of cooking, brush the salmon fillets generously with the glaze. If baking, you can spoon some glaze over the top of the salmon before placing it back in the oven for 2-3 more minutes. If pan-searing, pour the glaze into the pan and let it bubble and thicken slightly, spooning it over the salmon.
Serve:
Once cooked, remove the salmon from the oven or skillet. Garnish with fresh herbs like parsley, dill, or green onions. Serve immediately with your favorite sides like rice, roasted vegetables, or a fresh salad.
