- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat together the softened butter and powdered sugar until light and fluffy.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, finely chopped pecans, and salt. Gradually add this mixture to the buttery mixture, mixing gently until a dough forms.
- Scoop out small portions of dough and roll them into 1-inch balls. Place them on a parchment-lined baking sheet about an inch apart.
- Bake for 15-18 minutes or until the bottoms are lightly golden.
- Allow the butterballs to cool slightly, then roll them in additional powdered sugar.
- Let them cool completely on a wire rack before serving.
Notes
For a lighter option, you can use ghee instead of butter. Chill your dough for 30 minutes for a firmer texture. Don’t overbake to keep them light and crumbly. Try substituting pecans with almonds or walnuts for a different flavor.
