  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/4 teaspoon salt
  • additional cup powdered sugar for coating

Baking
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the softened butter and powdered sugar until light and fluffy.
  3. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, finely chopped pecans, and salt. Gradually add this mixture to the buttery mixture, mixing gently until a dough forms.
  5. Scoop out small portions of dough and roll them into 1-inch balls. Place them on a parchment-lined baking sheet about an inch apart.
  6. Bake for 15-18 minutes or until the bottoms are lightly golden.
  7. Allow the butterballs to cool slightly, then roll them in additional powdered sugar.
  8. Let them cool completely on a wire rack before serving.

Notes

For a lighter option, you can use ghee instead of butter. Chill your dough for 30 minutes for a firmer texture. Don’t overbake to keep them light and crumbly. Try substituting pecans with almonds or walnuts for a different flavor.
