Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and black pepper. Add the chicken thighs, ensuring they're well coated.
- In another bowl, toss the diced potatoes with olive oil, salt, and pepper. Spread them out on one side of a baking sheet.
- Place the marinated chicken thighs skin-side up on the baking sheet next to the potatoes. Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
Baking
- Slide the baking sheet into your preheated oven. Bake for about 45 minutes or until the chicken is cooked through (the internal temperature should reach 165°F or 74°C) and the potatoes are golden brown.
Serving
- Once done, remove from the oven and garnish with chopped fresh parsley. Serve hot and enjoy your delicious meal!
Notes
Store leftovers in an airtight container for up to four days in the refrigerator, or freeze for up to three months. Reheat in the oven at 350°F (175°C) for 20-25 minutes.
