Preparation
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels and season both sides generously with salt, pepper, and Italian seasoning.
Cooking
- In a large oven-proof skillet, heat the olive oil over medium heat. Add the chicken thighs skin side down, searing for about 5-7 minutes until golden brown. Flip and sear the other side for another 5 minutes.
- While the chicken is searing, wash and quarter the potatoes, adding them to the skillet around the chicken once it’s flipped.
- Pour in the chicken broth, and add minced garlic and Parmesan cheese, stirring gently to combine. Scrape up any delicious bits from the bottom of the pan.
- Place the skillet in the preheated oven and bake for approximately 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
- Remove from the oven, sprinkle with fresh parsley, and enjoy your comforting meal!
Notes
If using chicken breasts, they may require less cooking time. For crispier potatoes, parboil for 10 minutes before baking. Avoid overcrowding the pan to ensure roasting instead of steaming. Should you have leftovers, refrigerate and consume within 3 days.
