  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs Ensure they are Halal-certified
  • 4 cloves garlic, minced
  • 1 tablespoon dried Italian herbs Such as oregano and basil
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it with olive oil.
  3. In a large bowl, combine the grated Parmesan cheese, breadcrumbs, minced garlic, dried Italian herbs, salt, and black pepper.
  4. Pat the chicken breasts dry with a paper towel.
  5. Dip each chicken breast in the olive oil, then coat with the breadcrumb mixture.
  6. Place the coated chicken on the prepared baking sheet.
Cooking
  1. Bake for about 25-30 minutes or until the chicken is cooked through and the coating is golden brown.
  2. Ensure the internal temperature reaches 165°F (75°C).
  3. Let the chicken rest for a few minutes, then garnish with fresh parsley or basil if desired before serving.

Notes

For substitutions, use crushed dry crackers or panko if breadcrumbs are unavailable. Avoid overcrowding the baking sheet to prevent steaming. Resting the chicken after baking helps retain juices.
