Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets and sliced mushrooms with olive oil, minced garlic, salt, and pepper until evenly coated.
Cooking
  1. Spread the coated vegetables on a baking sheet in a single layer to ensure they roast evenly.
  2. Roast in the preheated oven for about 20-25 minutes, or until the cauliflower is golden and tender.
  3. Once roasted, take them out of the oven, adjust the seasoning if needed, and sprinkle with fresh parsley.
  4. Serve hot.

Notes

Feel free to experiment with other vegetables like bell peppers or zucchini for additional flavor. For a stronger garlic flavor, add more cloves but be cautious of the roasting time to avoid burning.
