Method
Cooking the Rigatoni
- Cook the rigatoni according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
Searing the Steak Tips
- In a large skillet, heat olive oil over medium-high heat. Season the steak tips with salt and pepper.
- Add the steak tips to the pan and sear them for about 3-4 minutes on each side, or until they reach your desired level of doneness. Remove from the pan and set aside.
Preparing the Garlic Butter Sauce
- In the same skillet, reduce the heat to medium and add butter.
- Once melted, add minced garlic and sauté for about 1 minute until fragrant.
Combining Everything
- Return the steak tips to the skillet and stir to coat in the garlic butter.
- Add the cooked rigatoni and gently toss together. If the mixture seems dry, add pasta water, one tablespoon at a time.
Adding the Cheesy Goodness
- Stir in shredded cheddar and grated Parmesan cheese until melted and well combined.
- Taste and adjust the seasoning with more salt and pepper if needed.
Serving
- Garnish with freshly chopped parsley, if desired, and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat using the microwave or a skillet on low heat, adding a splash of water or extra garlic butter if needed.
