Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the halved baby potatoes in a bowl with olive oil, salt, and pepper until fully coated.
  3. Spread the potatoes out on a baking sheet in a single layer.
Cooking
  1. Roast the potatoes in the preheated oven for about 20-25 minutes or until they are golden brown and tender, tossing halfway through.
  2. While the potatoes are roasting, heat a large skillet over medium-high heat and add 1 tablespoon of butter to melt.
  3. Season the cubed steak with salt and pepper and add it to the skillet.
  4. Sear the steak for about 2-3 minutes on each side, or until browned and cooked to your preferred level of doneness.
  5. Once the steak is cooked, reduce the heat to low, add the minced garlic, and the remaining butter to the skillet.
  6. Stir everything together until the garlic is fragrant and the butter has melted.
  7. Once the potatoes are done, combine them with the steak in the skillet and toss gently to coat in the buttery garlic sauce.
  8. Garnish with fresh parsley if desired, and serve hot.
