  • 1 pound Scallops, ideally dry-packed Look for quality, dry-packed scallops for best results.
  • 4 tablespoons Unsalted butter, melted
  • 4 cloves Garlic, minced
  • ½ cup Breadcrumbs, preferably Panko Panko gives extra crunch.
  • 2 tablespoons Fresh parsley, chopped For freshness and garnish.
  • 1 tablespoon Lemon juice, freshly squeezed
  • Salt and black pepper, to taste
  • a pinch Paprika, for seasoning

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the scallops dry with paper towels to ensure they sear and bake nicely. Season with salt and pepper.
  3. In a bowl, combine melted butter, minced garlic, lemon juice, and chopped parsley.
  4. Place the scallops in a single layer in a greased baking dish. Pour the garlic butter mixture over the scallops, ensuring they're thoroughly coated.
  5. Sprinkle the breadcrumbs evenly over the scallops, and then lightly dust with paprika.
Baking
  1. Place in the oven and bake for about 12-15 minutes or until the scallops are opaque and cooked through. The breadcrumbs should be golden brown.
Serving
  1. Remove from the oven, add a bit more fresh parsley on top, and serve immediately.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven at a low temperature to avoid overcooking.
