Preparation
- Preheat your oven to 425°F (220°C).
- Pat the scallops dry with paper towels to ensure they sear and bake nicely. Season with salt and pepper.
- In a bowl, combine melted butter, minced garlic, lemon juice, and chopped parsley.
- Place the scallops in a single layer in a greased baking dish. Pour the garlic butter mixture over the scallops, ensuring they're thoroughly coated.
- Sprinkle the breadcrumbs evenly over the scallops, and then lightly dust with paprika.
Baking
- Place in the oven and bake for about 12-15 minutes or until the scallops are opaque and cooked through. The breadcrumbs should be golden brown.
Serving
- Remove from the oven, add a bit more fresh parsley on top, and serve immediately.
Notes
To store leftovers, keep in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven at a low temperature to avoid overcooking.
