Ingredients

Salad Base
  • 2 cups Fritos corn chips
  • 2 cups prepared chili canned or homemade
  • 1 cup shredded cheddar cheese
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives optional
  • 1/2 cup diced onions
  • 1 cup sour cream or Greek yogurt
  • 1 tablespoon taco seasoning optional

Method

Preparation
  1. If you're using canned chili, simply heat it in a pot over low heat until warmed through. If you’re feeling adventurous and want to make your own chili, take the time to cook your favorite recipe.
  2. While the chili is warming, get chopping! Dice your tomatoes, onions, and lettuce, and set them aside in a bowl.
Assembly
  1. In a large serving bowl, start by layering 1 cup of chopped lettuce at the bottom. Follow it with the warmed chili, ensuring it’s evenly spread.
  2. Add half of the shredded cheese on top of the chili, letting it melt slightly.
  3. Next, add the diced tomatoes, black olives, and remaining cheese. Finish by drizzling the sour cream or Greek yogurt on top.
  4. Just before serving, generously sprinkle the Fritos on top to maintain their crunch.
  5. Grab a spoon and dig in!

Notes

For added spice, consider adding jalapeños or cayenne pepper to the chili. To keep the Fritos crunchy, add them as the top layer just before serving. Leftovers can be stored in an airtight container and are best consumed within 2-3 days.
