  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 cup of your choice of protein (grilled chicken, tofu, or black beans)
  • 1 cup diced tomatoes
  • 1 cup corn (fresh or canned)
  • 1 each avocado, diced
  • 0.5 cup diced red onion
Garnishes and Seasoning
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges
  • 2 tablespoons olive oil For cooking protein
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • Salt and pepper, to taste

Method
 

Preparation
  1. Cook the rice according to package instructions. If using brown rice, allow extra time for it to cook thoroughly.
  2. In a skillet, heat a drizzle of olive oil over medium heat. Add in your chosen protein (grilled chicken, tofu, or black beans) and sprinkle with taco seasoning. Cook for about 5-7 minutes until heated through.
  3. While the protein cooks, chop your tomatoes, avocado, and red onion.
Assembly
  1. Start with a base of cooked rice in a bowl.
  2. Top it with your seasoned protein, diced tomatoes, corn, diced avocado, and red onion.
  3. Sprinkle garnishes with fresh cilantro, a squeeze of lime, and season with salt and pepper to taste.

Notes
