Preparation
  1. Gather all your ingredients. Dice the peaches, finely chop the jalapeño and red onion, and chop the cilantro.
  2. In a mixing bowl, combine the diced peaches, chopped jalapeño, red onion, and cilantro.
  3. Squeeze the lime juice over the mixture, and sprinkle in a bit of salt.
  4. Gently stir everything together until well combined. Taste and adjust the salt or lime juice if needed.
  5. For the best flavor, let the salsa chill in the refrigerator for about 15-30 minutes before serving.

Notes

Fresh peach salsa is best enjoyed immediately but can be stored in an airtight container in the refrigerator for up to 2 days. The vibrant colors may fade and it may become more liquid over time. Add lime juice right before serving for freshness.
