  • 8 ounces Feta cheese, crumbled Use fresh feta for best results.
  • 2 cups Cherry tomatoes, halved
  • 3 tablespoons Olive oil Extra virgin is recommended.
  • 3 cloves Garlic, minced
  • 2 cups Fresh spinach (optional) Add for extra nutrition.
  • 1 teaspoon Dried oregano Alternatively, use fresh herbs if available.
  • to taste Salt and pepper Season to preference.
  • for garnish Fresh basil or parsley Adds freshness to the dish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, bring salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
  3. In a large mixing bowl, toss halved cherry tomatoes, minced garlic, and fresh spinach together. Drizzle with olive oil, sprinkle with oregano, salt, and pepper, and mix well.
  4. Once your pasta is ready, add it to the vegetable mixture and stir gently. Next, fold in the crumbled feta cheese, ensuring it's evenly distributed.
Baking
  1. Pour the entire mixture into a greased baking dish, spreading it evenly.
  2. Place the dish in the preheated oven and bake for 20-25 minutes or until the top is slightly golden and crispy.
Serving
  1. Once baked, let it cool for a few minutes before garnishing with fresh basil or parsley and serving.

Notes

For variations, feel free to add your favorite vegetables like bell peppers or zucchini. Ensure pasta is cooked al dente, and don't overbake the dish to maintain a creamy texture. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) or microwave individual servings in 1-2 minute intervals.
