  • 1 medium cucumber, thinly sliced
  • 8 ounces cream cheese, softened
  • 8 slices white or whole grain bread
  • Salt, to taste
  • Pepper, to taste
  • Fresh dill (optional, for garnish)

Method
 

Preparation
  1. Wash and thinly slice the cucumber into 1/8-inch rounds.
  2. In a medium bowl, combine softened cream cheese with a pinch of salt and black pepper. Optional: mix in fresh dill for extra flavor.
Assembling the Sandwiches
  1. Spread the cream cheese mixture generously on one side of two slices of bread.
  2. Layer the cucumber slices evenly on top of the cream cheese.
  3. Place the second slice of bread, cream cheese side down, on top of the cucumbers and press gently.
  4. Cut each sandwich into quarters or triangles.
  5. Serve immediately or refrigerate for up to two hours before serving.

Notes

For best texture, make the sandwiches just before serving. Store leftovers in an airtight container in the fridge for about two days. Avoid freezing, as the bread may become mushy.
