  1. Preheat your oven to 375°F (190°C) to get it nice and hot before the dish goes in.
  2. Rinse and slice the zucchinis into thin rounds. Halve the cherry tomatoes and set aside.
  3. In a large skillet at medium heat, add the olive oil. Once hot, add the diced chicken. Season with salt, pepper, and minced garlic. Cook for about 5-7 minutes until the chicken is no longer pink inside.
  4. In a baking dish, combine cooked chicken, sliced zucchinis, and cherry tomatoes. Sprinkle Italian seasoning for that extra flavor kick.
  5. Top the mixture with the shredded mozzarella cheese, ensuring every piece is coated for that lovely golden crust.
  6. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbling and slightly golden.

Notes

Substitutions: You can swap chicken for ground turkey or halal chicken sausage. Timing: Cut your zucchini evenly so they cook at the same rate as the chicken. Avoid overcooking the cheese to prevent it from becoming rubbery.
