  • 4 large large onions, thinly sliced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar to help caramelize the onions
  • 1 teaspoon salt
  • 8 cups beef or vegetable broth high-quality preferred
  • 2 teaspoons fresh thyme or 1 teaspoon dried
  • 1 piece bay leaf
  • to taste salt and pepper to adjust seasoning
  • 8 slices crusty bread
  • 3 cups shredded Gruyère or Swiss cheese for topping

Method
 

Caramelizing the Onions
  1. Melt the butter and olive oil in a large pot over medium heat. Add the sliced onions, sugar, and salt.
  2. Stir occasionally for about 30-40 minutes until the onions are deep golden brown and caramelized.
Making the Soup
  1. Once the onions are caramelized, pour in the beef or vegetable broth.
  2. Add thyme, bay leaf, and season with salt and pepper. Bring to a boil and then reduce the heat to a simmer for 20-30 minutes.
Preparing the Bread
  1. While the soup is simmering, preheat your oven to 400°F (200°C).
  2. Place the bread on a baking sheet and toast in the oven until golden brown, about 5-7 minutes.
Assembling the Soup
  1. Remove the bay leaf from the soup.
  2. Ladle the hot soup into oven-safe bowls, top each with a slice of toasted bread, and a generous portion of cheese.
Finishing Touch
  1. Place the bowls on a baking sheet and broil in the oven for 2-5 minutes, watching carefully until the cheese is bubbling and slightly browned.
Serving
  1. Carefully remove the bowls from the oven and let cool slightly. Serve piping hot and enjoy.
