Ingredients
  

Onions and Flavoring
  • 4 large large onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cups beef broth (or vegetable broth for a lighter option)
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Creamy Ingredients and Topping
  • 1 cup heavy cream
  • 2 cups shredded Gruyère cheese (or a substitute like Swiss cheese)
  • 1 cup French bread croutons or toasted bread, for topping

Method
 

Caramelizing the Onions
  1. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes or until they turn golden brown and caramelized.
Adding Flavor
  1. Once the onions are nicely caramelized, return the heat to medium-high, and add the beef or vegetable broth, dried thyme, salt, and pepper. Let this simmer for about 5 minutes.
Creamy Delight
  1. Reduce the heat to low, and slowly stir in the heavy cream until mixed well and warm.
Assembling
  1. Preheat your oven to 350°F (175°C). In a large baking dish, layer half of the onion mixture, then sprinkle one cup of shredded cheese. Layer the remaining onion mixture on top, and top it all with the remaining cup of cheese and your croutons or toasted bread.
Baking Time
  1. Place in the preheated oven and bake for about 25-30 minutes or until bubbly and golden on top.
Serve
  1. Once out of the oven, let it cool for a few minutes before digging in.

Notes

Keep stirring the onions to prevent burning. Experiment with herbs for added flavor. Layer cheese and croutons evenly.
