  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 3 large eggs
  • 0.5 cup vegetable oil
  • 1 cup buttermilk
  • 2 tbsp matcha powder Be sure to sift for even distribution.
  • 0.5 tsp vanilla extract

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (175°C). Grease and flour two round 9-inch cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and matcha powder until combined.
  3. In another bowl, beat the eggs with the vegetable oil, buttermilk, and vanilla extract until smooth and well-blended.
  4. Slowly add the wet ingredients to the dry mixture, stirring gently until no lumps remain. Avoid overmixing for that fluffy texture!
  5. Divide the batter equally between the prepared cake pans and smooth the tops with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. Frost with your choice of whipped cream or matcha frosting, and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Thaw before serving.
