Preparation and Baking
- Preheat your oven to 350°F (175°C). Grease and flour two round 9-inch cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and matcha powder until combined.
- In another bowl, beat the eggs with the vegetable oil, buttermilk, and vanilla extract until smooth and well-blended.
- Slowly add the wet ingredients to the dry mixture, stirring gently until no lumps remain. Avoid overmixing for that fluffy texture!
- Divide the batter equally between the prepared cake pans and smooth the tops with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
- Frost with your choice of whipped cream or matcha frosting, and enjoy!
Notes
Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Thaw before serving.
