Dough Ingredients
  • 2 cups gluten-free all-purpose flour Ensure it's a gluten-free blend.
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup melted butter Can be substituted with coconut oil for dairy-free.
  • 1 large egg
Filling Ingredients
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
Icing Ingredients
  • 1/2 cup icing sugar For glazing the rolls.
  • 1-2 tablespoons milk Adjust for desired consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish or line it with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix the milk, melted butter, and egg until well combined.
  4. Combine the wet and dry ingredients until a soft dough forms. Don't worry if it's a little sticky.
  5. Turn the dough onto a floured surface (with more gluten-free flour) and gently knead it for about 1 minute, shaping it into a rectangle (about 1/2 inch thick).
  6. Sprinkle the ground cinnamon and brown sugar evenly over the dough.
  7. Roll the dough tightly from one end to the other, creating a log shape. Slice into 1-inch pieces.
  8. Place the slices in the prepared baking dish, cover with a towel, and let rise for about 30 minutes.
Baking
  1. Bake in the preheated oven for 22-25 minutes until golden brown.
  2. While the rolls are baking, prepare the icing by mixing icing sugar with milk until you reach your desired consistency.
  3. Once baked, drizzle the icing over warm rolls and enjoy!

Notes

For dairy-free, substitute butter with coconut oil and sugar with maple syrup. Ensure you allow the rolls to rise fully for maximum fluffiness. Avoid over-mixing the dough to prevent tough rolls.
