- Add the cottage cheese, almond flour, baking powder, and salt to the egg yolks. Stir until combined, creating a creamy mixture.
- Using a hand mixer or a whisk, beat the egg whites and cream of tartar together until stiff peaks form.
- Gently fold the egg white mixture into the cottage cheese mixture until just combined.
- Scoop portions of the mixture onto the prepared baking sheet, creating small rounds or ovals.
- Bake for 25-30 minutes or until golden brown on top.
- Let your cloud bread cool slightly before enjoying it warm or storing it for later.
Notes
Ensure that your egg whites are free from yolk for the best fluffiness. If you're out of almond flour, coconut flour can be used but may need quantity adjustment. Avoid overfolding the egg whites to maintain airy texture.
