Ingredients

Vegetables
  • 2 medium cucumbers, thinly sliced
  • 1 medium onion, thinly sliced (red or yellow works well)
  • 2 medium tomatoes, diced
Marinade
  • 1/4 cup white vinegar (or your choice of vinegar)
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 1 teaspoon sugar (optional)
  • Salt and pepper, to taste
  • Fresh herbs (like dill, parsley, or cilantro), to taste

Method

Preparation
  1. Start by slicing your cucumbers and onion thinly. Dice the tomatoes and set them aside.
Make the Marinade
  1. In a mixing bowl, whisk together the white vinegar, water, olive oil, and sugar (if using). Add salt and pepper to taste.
Combine Everything
  1. Add the cucumbers, onions, and tomatoes into the bowl with the marinade. Gently toss everything together until the veggies are well-coated.
Marinate
  1. Allow the mixture to sit for at least 10 minutes. For even better flavor, let it marinate in the refrigerator for about an hour before serving.
Serve
  1. Before serving, give it a gentle stir, and garnish with your choice of fresh herbs on top!

Notes

Choose fresh, in-season produce for the best flavors. Feel free to experiment with different types of vinegar or add a splash of lemon juice to brighten the flavors even more. Storing leftovers in an airtight container in the refrigerator for up to 3 days is recommended. The long marinating time helps to absorb flavors, make it a few hours in advance for maximum taste.
