  • 14 oz Tofu, pressed and cubed
  • 8 oz Noodles (rice noodles work wonderfully)
  • 2-3 tablespoons Gochujang Adjust according to your spice tolerance
  • 2 tablespoons Lime juice Freshly squeezed is best
  • 1 tablespoon Soy sauce Or tamari for gluten-free
  • 1 tablespoon Sesame oil
  • 1 cup Vegetables (bell peppers, carrots, cucumbers are great options)
  • Green onions, for topping
  • Sesame seeds, for garnish
  • Fresh cilantro, optional, for garnish

Method
 

Preparation
  1. Begin by cooking the noodles according to the package instructions. Drain and set aside.
  2. In a non-stick pan over medium heat, add a drizzle of sesame oil. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from heat.
  3. In a small bowl, mix together gochujang, lime juice, soy sauce, and the remaining sesame oil until well combined. Adjust the spice to your liking by adding more gochujang if desired.
  4. In clean jars, layer in the cooked noodles, followed by the tofu, followed by fresh vegetables of your choice. Drizzle the sauce generously over each layer.
  5. Top each jar with chopped green onions, sesame seeds, and fresh cilantro if using.
  6. Close the jars with a lid, and they’re ready to enjoy right away or kept in the fridge for up to 3 days!

Notes

Press your tofu to remove excess moisture, customize vegetables, and store jars in the fridge for quick meals. For spice adjustments, consider adding honey or maple syrup for a sweeter version.
