Preparation
- Begin by cooking the noodles according to the package instructions. Drain and set aside.
- In a non-stick pan over medium heat, add a drizzle of sesame oil. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from heat.
- In a small bowl, mix together gochujang, lime juice, soy sauce, and the remaining sesame oil until well combined. Adjust the spice to your liking by adding more gochujang if desired.
- In clean jars, layer in the cooked noodles, followed by the tofu, followed by fresh vegetables of your choice. Drizzle the sauce generously over each layer.
- Top each jar with chopped green onions, sesame seeds, and fresh cilantro if using.
- Close the jars with a lid, and they’re ready to enjoy right away or kept in the fridge for up to 3 days!
Notes
Press your tofu to remove excess moisture, customize vegetables, and store jars in the fridge for quick meals. For spice adjustments, consider adding honey or maple syrup for a sweeter version.
