  • 1 cup heavy cream or a dairy-free alternative Can use a dairy-free option for vegan adaptation.
  • 1/2 cup cream cheese (softened; use Halal-certified) Softened for easier mixing.
  • 1/2 cup grated Parmesan cheese Optional but highly recommended.
  • 2 cloves garlic, minced Enhances the flavor profile.
  • 1 tablespoon olive oil For sautéing the garlic.
  • to taste Salt and black pepper Adjust according to preference.
  • a pinch nutmeg Adds warmth and flavor.

Method
 

Preparation
  1. Start by washing the fresh spinach thoroughly to remove any dirt. Trim the stems, if needed.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it!
Cooking
  1. Add the washed spinach to the skillet, stirring until it wilts down, which should take around 3-4 minutes.
  2. In a separate bowl, combine the heavy cream, softened cream cheese, and grated Parmesan (if using). Whisk until smooth.
  3. Pour the cream mixture into the skillet with the wilted spinach, stirring well to combine. Season with salt, black pepper, and a pinch of nutmeg.
  4. Allow the mixture to simmer for another 5-7 minutes, stirring occasionally, until it thickens to your liking.
  5. Remove from heat and transfer to a serving dish. Enjoy hot, and prepare for compliments!

Notes

Store in an airtight container in the fridge for up to 3 days. Reheat in the microwave or stovetop, adding a splash of cream to restore texture. For freezing, avoid freezing with the sauce, freeze wilted spinach only and combine later when serving.
