Preparation
- Start by washing the fresh spinach thoroughly to remove any dirt. Trim the stems, if needed.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it!
Cooking
- Add the washed spinach to the skillet, stirring until it wilts down, which should take around 3-4 minutes.
- In a separate bowl, combine the heavy cream, softened cream cheese, and grated Parmesan (if using). Whisk until smooth.
- Pour the cream mixture into the skillet with the wilted spinach, stirring well to combine. Season with salt, black pepper, and a pinch of nutmeg.
- Allow the mixture to simmer for another 5-7 minutes, stirring occasionally, until it thickens to your liking.
- Remove from heat and transfer to a serving dish. Enjoy hot, and prepare for compliments!
Notes
Store in an airtight container in the fridge for up to 3 days. Reheat in the microwave or stovetop, adding a splash of cream to restore texture. For freezing, avoid freezing with the sauce, freeze wilted spinach only and combine later when serving.
