Ingredients
  

For the marinade
  • 1 cup coconut milk
  • 1/2 cup fresh basil leaves, finely chopped
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • Salt and pepper to taste
For the chicken
  • 4 pieces boneless, skinless chicken breasts

Method
 

Preparation
  1. In a mixing bowl, combine coconut milk, chopped basil, lime juice, minced garlic, and honey. Whisk well until all ingredients are integrated.
  2. Season the chicken breasts with salt and pepper.
  3. Pour the marinade over the chicken in a resealable plastic bag or a shallow dish. Ensure each piece is well-coated. Seal or cover and refrigerate for at least 1 hour (ideally 2-4 hours).
Cooking
  1. Heat your grill to medium-high.
  2. Remove the chicken from the marinade, allowing excess to drip off. Place the chicken breasts on the grill.
  3. Cook for 6-8 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C) and has nice grill marks.
  4. Remove from the grill and let the chicken rest for 5 minutes before slicing.

Notes

For a richer flavor, marinate the chicken for up to 4 hours. Consider adding a splash of soy sauce or sriracha for a spicy kick. Use a meat thermometer to avoid overcooking.
