Preparation
- In a mixing bowl, combine coconut milk, chopped basil, lime juice, minced garlic, and honey. Whisk well until all ingredients are integrated.
- Season the chicken breasts with salt and pepper.
- Pour the marinade over the chicken in a resealable plastic bag or a shallow dish. Ensure each piece is well-coated. Seal or cover and refrigerate for at least 1 hour (ideally 2-4 hours).
Cooking
- Heat your grill to medium-high.
- Remove the chicken from the marinade, allowing excess to drip off. Place the chicken breasts on the grill.
- Cook for 6-8 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C) and has nice grill marks.
- Remove from the grill and let the chicken rest for 5 minutes before slicing.
Notes
For a richer flavor, marinate the chicken for up to 4 hours. Consider adding a splash of soy sauce or sriracha for a spicy kick. Use a meat thermometer to avoid overcooking.
