  • 2 large onions, thinly sliced
  • 4 tablespoons butter
  • 2 cups beef or vegetable broth (ensure it’s Halal-compliant)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • to taste Salt
  • to taste Pepper
  • 1 cup grated cheese (Swiss or Gruyère work great)
  • as needed Fresh parsley (for garnish, optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the thinly sliced onions, stirring occasionally, and sauté for about 15-20 minutes, or until they turn a deep golden brown.
  3. Once the onions are caramelized, stir in the garlic powder, thyme, salt, and pepper. Pour in the broth and let simmer for another 5 minutes.
  4. In a baking dish, place the chicken breasts and pour the onion mixture over the top.
  5. Sprinkle the grated cheese evenly over the chicken and onion mixture.
  6. Cover the dish with foil and bake for 30 minutes. Remove the foil and allow the cheese to brown for an additional 15 minutes.
  7. Once done, take the dish out of the oven, sprinkle with fresh parsley (if desired), and serve hot.

Notes

Ingredient Swaps: Consider using a mix of different cheeses for a richer flavor program. Don't rush the onions; fully caramelize them for the best taste. Ensure chicken is not too lean to avoid dryness.
