Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked rice white, brown, or cauliflower rice
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn kernels fresh or frozen
  • 1 small avocado diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded cheese optional
  • Lime wedges for serving
  • Sour cream or Greek yogurt optional, for topping

Instructions
 

  • Prepare the Shrimp: In a medium bowl, combine the shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat the shrimp evenly in the spices.
  • Cook the Shrimp: Heat a skillet or grill pan over medium-high heat. Cook the seasoned shrimp for 2-3 minutes per side, or until they turn pink and are fully cooked through. Remove from heat and set aside.
  • Assemble the Bowl: In a bowl, layer the cooked rice as the base. Add black beans, corn, diced avocado, and cooked shrimp on top.
  • Garnish: Sprinkle chopped red onion, cilantro, and shredded cheese (if using) over the top. Add a dollop of sour cream or Greek yogurt if desired.
  • Serve: Serve the Fiesta Shrimp Bowl with lime wedges on the side for a fresh, zesty kick.
