Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked rice white, brown, or cauliflower rice
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn kernels fresh or frozen
  • 1 small avocado diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded cheese optional
  • Lime wedges for serving
  • Sour cream or Greek yogurt optional, for topping

Method
 

  1. Prepare the Shrimp: In a medium bowl, combine the shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat the shrimp evenly in the spices.
  2. Cook the Shrimp: Heat a skillet or grill pan over medium-high heat. Cook the seasoned shrimp for 2-3 minutes per side, or until they turn pink and are fully cooked through. Remove from heat and set aside.
  3. Assemble the Bowl: In a bowl, layer the cooked rice as the base. Add black beans, corn, diced avocado, and cooked shrimp on top.
  4. Garnish: Sprinkle chopped red onion, cilantro, and shredded cheese (if using) over the top. Add a dollop of sour cream or Greek yogurt if desired.
