- 1 cup cooked rice white, brown, or cauliflower rice
- 1/2 cup black beans rinsed and drained
- 1/2 cup corn kernels fresh or frozen
- 1 small avocado diced
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/4 cup shredded cheese optional
- Lime wedges for serving
