  • 2 pieces potatoes, diced

  • 1 teaspoon dried thyme
  • 1 piece bay leaf

Preparation
  1. Begin by prepping your ingredients. Chop the onion, slice the carrots, and dice the potatoes. Moreover, don’t forget to mince the garlic!
Searing the Beef
  1. In a large pot, heat the olive oil over medium-high heat. Once hot, add the tri-tip beef cubes. Sear them until they turn a beautiful browned color on all sides. This step locks in the flavors, setting the stage for a rich stew.
Sauté the Aromatics
  1. After browning the beef, add the chopped onion and minced garlic to the pot. Cook until the onion is translucent, which should take about 3-4 minutes.
Building the Stew
  1. Stir in the tomato paste and cook for an additional minute to enhance the flavor. Then add the sliced carrots, diced potatoes, beef broth, dried thyme, bay leaf, and season with salt and pepper.
Simmer Time
  1. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 2-3 hours until the beef is tender and the flavors meld together. Stir occasionally.
Serving
  1. Remove the bay leaf before serving. Ladle the stew into bowls, and feel free to garnish with fresh parsley or a dollop of yogurt for that extra touch!

Notes

For an even richer flavor, let the stew sit overnight in the refrigerator before reheating. The flavors deepen as they meld together. To prevent the stew from becoming too thick, add more broth if needed.
