  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 tablespoon vegetable oil

Preparation
  1. Start by slicing the chicken breasts into thin strips to help them cook faster.
  2. Mince the garlic and grate the ginger. Chop the lemongrass, ensuring you use the tender inner parts.
Marination
  1. In a mixing bowl, combine the sliced chicken, garlic, ginger, soy sauce, fish sauce, and sugar.
  2. Mix well so the chicken is evenly coated and let it marinate for about 10-15 minutes.
Cooking
  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Once hot, add the marinated chicken and stir-fry for about 7-10 minutes until the chicken is fully cooked.
Final Touches
  1. Taste and season with salt and pepper as needed. Optionally, add extra lime or chilies if desired.
  2. Garnish with fresh cilantro before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. Reheat slowly on low heat while adding a teaspoon of water to maintain moisture.
