  • 4 pieces chicken breasts (boneless, skinless)
  • 1/4 cup lemon juice (freshly squeezed) Freshly squeezed gives the best flavor.
  • 2 teaspoons lemon pepper seasoning
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper
  • for garnish Fresh parsley

Method
 

Preparation
  1. Rinse the chicken breasts under cold water and pat them dry with a paper towel.
  2. Place the chicken in the crockpot.
Marinade
  1. In a small bowl, combine lemon juice, lemon pepper seasoning, garlic powder, olive oil, salt, and pepper. Stir until well mixed.
  2. Pour the marinade over the chicken breasts ensuring they are fully coated.
Cooking
  1. Cover the crockpot and set it to cook on low for approximately 4 to 6 hours or on high for 2 to 3 hours.
  2. Check the internal temperature of the chicken; it should reach 165°F (75°C). Cook for an additional 30 minutes if necessary.
Serving
  1. Once done, shred or serve the chicken whole, garnished with fresh parsley. Pair it with rice, vegetables, or a green salad.

Notes

For substitutions, if you're out of lemon pepper seasoning, use black pepper, dried lemon peel, and salt. To keep the chicken juicy when reheating, thaw overnight in the fridge and heat gently.
