Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons taco seasoning
  • Juice and zest of 2 limes
  • 2 garlic cloves minced
  • 1 tablespoon honey optional, for added sweetness
  • 1/2 teaspoon smoked paprika optional, for extra smokiness
  • Salt and pepper to taste
  • Fresh cilantro chopped (for garnish)

Equipment

  • Mixing bowl
  • Whisk
  • Large resealable plastic bag or shallow dish
  • Grill or grill pan
  • Tongs
  • Meat thermometer

Method

  1. Prepare the Marinade:
  2. In a mixing bowl, whisk together olive oil, taco seasoning, lime juice, lime zest, minced garlic, honey (if using), smoked paprika, salt, and pepper.
  3. Marinate the Chicken:
  4. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours for maximum flavor).
  5. Preheat the Grill:
  6. Heat your grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
  7. Grill the Chicken:
  8. Remove the chicken from the marinade, letting the excess drip off. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  9. Rest and Garnish:
  10. Transfer the cooked chicken to a plate and let it rest for 5 minutes. Garnish with freshly chopped cilantro before serving.
