  • 4 cups mixed greens (spinach, arugula, or lettuce) Wash and dry the greens well.
  • 1/4 cup sliced almonds Can be toasted for extra flavor.
  • 1/4 cup crumbled feta cheese Choose a good quality feta for best taste.
  • 1/4 cup poppy seed dressing (store-bought or homemade) Dress just before serving.

Preparation
  1. If you haven’t already, cook and shred your chicken. Grilling or poaching are excellent methods for a tender outcome. Season it lightly with salt and pepper.
  2. Rinse your mixed greens thoroughly under cold water. Pat them dry with a clean kitchen towel or use a salad spinner to remove excess moisture.
  3. Rinse your choice of mixed berries and pat them dry. If you are using strawberries, slice them into smaller pieces for easier eating.
Assembly
  1. In a large bowl, add the mixed greens, shredded chicken, and berries. Gently mix them to combine the ingredients without bruising the fruit.
  2. Sprinkle the sliced almonds and crumbled feta on top.
  3. Drizzle the poppy seed dressing over the salad just before serving to preserve the crispness of the greens. Toss everything together lovingly!
