  • 1.5 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  4. Use a cookie scoop or spoon to drop rounded tablespoons of dough onto ungreased baking sheets, leaving about 2 inches between each cookie.
Baking
  1. Place the baking sheets in the oven and bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

For best results, chill the dough for 30 minutes before baking to help the cookies hold their shape. Don't overbake; they should look slightly undercooked in the center when removed from the oven.
