For the Strawberry Filling
  • 4 cups fresh strawberries, hulled and halved Use fresh, ripe strawberries for the best flavor.
  • 1/2 cup granulated sugar Used to sweeten the strawberries.
  • 1 tablespoon lemon juice
For the Batter
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar This amount is for the batter.
  • 1 cup milk
  • 1/2 cup unsalted butter, melted Can be substituted with a plant-based option if needed.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the hulled strawberries, ½ cup of sugar, and lemon juice. Toss the strawberries until evenly coated and let sit for about 10 minutes.
Making the Batter
  1. In another bowl, whisk together flour, remaining ½ cup of sugar, baking powder, and salt.
  2. Gradually stir in milk, melted butter, and vanilla extract until you have a smooth batter.
Combining
  1. Pour the batter into a greased baking dish, ensuring an even layer.
  2. Spoon the strawberry mixture (with juices) on top of the batter; do not mix.
Baking
  1. Bake for 45 to 50 minutes, or until the top is golden brown and the edges are bubbling.
Serving
  1. Allow the cobbler to cool for at least 10 minutes before serving warm.

Notes

Enjoy warm with vanilla ice cream, or cold for breakfast. Leftovers can be stored in an airtight container in the fridge for up to three days.
