Preparation
- In a large mixing bowl, combine the flour, salt, and baking powder. Whisk together until thoroughly mixed.
- Pour in the sourdough discard and olive oil. Stir with a wooden spoon or dough whisk until the mixture begins to come together.
- Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic. Add warm water, a tablespoon at a time, if the dough feels too dry.
- Form the dough into a ball and place it in a lightly oiled bowl. Cover it with a damp cloth or plastic wrap for about 20-30 minutes.
- While the dough is resting, preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
- Once the dough has rested, turn it out onto a lightly floured surface. Using a rolling pin, roll it into your desired shape and thickness.
- Transfer the shaped dough to parchment paper if using a baking sheet, and add your favorite pizza toppings.
- Carefully place the pizza in the preheated oven (on the stone or baking sheet) and bake for 12-15 minutes, or until the crust is golden and toppings are bubbling.
- Remove the pizza from the oven and let it cool for a couple of minutes. Slice and enjoy!
Notes
For best results, ensure your sourdough discard is bubbly and active. Try experimenting with different flours for added flavor!
