For the Meatloaf
  • 1 pound ground beef or turkey Choose based on preference.
  • 1 cup breadcrumbs
  • 1/2 cup shredded cheese (preferably smoked cheddar or pepper jack)
  • 1/2 cup diced jalapeños (fresh or pickled) Adjust based on spice preference.
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon smoked paprika

For the Creamy Ranch Drizzle
  • 1/2 cup ranch dressing
  • 1 tablespoon lime juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking dish or a loaf pan by lightly greasing it.
  2. In a large bowl, combine the ground beef or turkey, breadcrumbs, shredded cheese, jalapeños, onion, garlic, milk, egg, smoked paprika, salt, and pepper.
  3. Mix everything together until well combined but avoid over-mixing!
  4. Transfer the mixture to the prepared baking dish and shape it into a loaf, smoothing the top with a spatula.
Cooking
  1. Place the meatloaf in the oven and bake for about 45-50 minutes or until the internal temperature reaches 160°F (70°C).
  2. While the meatloaf is baking, whisk together the ranch dressing and lime juice in a small bowl. Set aside until ready to serve.
  3. Once cooked, remove the meatloaf from the oven and let it rest for about 5-10 minutes.
  4. Slice and drizzle with the creamy ranch mixture before serving.

Notes

Adjust the amount of jalapeños to suit your taste. You can substitute ground turkey or chicken for a leaner option without sacrificing flavor. Consider adding crushed tortilla chips to the meat mixture for a fun, crunchy texture.
