Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking dish or a loaf pan by lightly greasing it.
- In a large bowl, combine the ground beef or turkey, breadcrumbs, shredded cheese, jalapeños, onion, garlic, milk, egg, smoked paprika, salt, and pepper.
- Mix everything together until well combined but avoid over-mixing!
- Transfer the mixture to the prepared baking dish and shape it into a loaf, smoothing the top with a spatula.
Cooking
- Place the meatloaf in the oven and bake for about 45-50 minutes or until the internal temperature reaches 160°F (70°C).
- While the meatloaf is baking, whisk together the ranch dressing and lime juice in a small bowl. Set aside until ready to serve.
- Once cooked, remove the meatloaf from the oven and let it rest for about 5-10 minutes.
- Slice and drizzle with the creamy ranch mixture before serving.
Notes
Adjust the amount of jalapeños to suit your taste. You can substitute ground turkey or chicken for a leaner option without sacrificing flavor. Consider adding crushed tortilla chips to the meat mixture for a fun, crunchy texture.
