- In a large bowl, combine your sliced bell peppers, zucchini, red onion, and halved baby potatoes. Drizzle with olive oil, and season with garlic powder, onion powder, salt, and pepper. Toss everything together until evenly coated.
- On a baking sheet lined with parchment paper, spread the sausage links evenly across the sheet. Surround the sausages with your seasoned vegetables in a single layer.
Cooking
- Place the baking sheet in the preheated oven and let it roast for about 25-30 minutes, or until the sausages are browned and the vegetables are tender. Toss everything halfway through for even cooking.
Serving
- Once done, remove from the oven, garnish with fresh herbs, and serve hot.
Notes
Feel free to swap your favorite vegetables. If using larger sausage links, consider slicing them for even cooking. Avoid overcrowding the baking sheet for best results.
