Method
Cooking Pasta
- In a large pot, boil salted water. Add your pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.
Preparing Sausage and Vegetables
- In a large skillet, heat olive oil over medium heat. Add the Halal Italian sausage, breaking it up with a spatula, and cook until browned (about 5-7 minutes). Ensure it’s fully cooked through.
- Add the sliced onion and bell pepper to the skillet with the sausage. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
Creating the Sauce
- Pour in the diced tomatoes (with juices), and season with salt and pepper. Allow the mixture to simmer for about 5-7 minutes, letting the flavors meld.
Combining
- Toss in the drained pasta, mixing everything together. If the pasta looks dry, gradually add some reserved pasta water until you reach your desired consistency.
Serving
- Top with fresh basil as a garnish if you desire. Serve it warm and enjoy the delightful combination of flavors!
Notes
For a lighter option, consider using chicken sausage or vegetarian sausages. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Reheat gently in a skillet for best results.
