Vegetables
  • 1 bell pepper (sliced) Any color of bell pepper can be used.
  • 1 onion (sliced) Yellow or white onion works well.
  • 2 cloves garlic (minced) Fresh garlic preferred for flavor.
Sauce Ingredients
  • 1 can diced tomatoes (14 oz) You can use fire-roasted for extra flavor.
  • 2 tbsp olive oil For cooking the sausage and vegetables.
  • Salt and pepper to taste Adjust seasoning according to preference.
Garnish
  • Fresh basil (for garnish, optional) Adds freshness to the dish.

Method
 

Cooking Pasta
  1. In a large pot, boil salted water. Add your pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.
Preparing Sausage and Vegetables
  1. In a large skillet, heat olive oil over medium heat. Add the Halal Italian sausage, breaking it up with a spatula, and cook until browned (about 5-7 minutes). Ensure it’s fully cooked through.
  2. Add the sliced onion and bell pepper to the skillet with the sausage. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
Creating the Sauce
  1. Pour in the diced tomatoes (with juices), and season with salt and pepper. Allow the mixture to simmer for about 5-7 minutes, letting the flavors meld.
Combining
  1. Toss in the drained pasta, mixing everything together. If the pasta looks dry, gradually add some reserved pasta water until you reach your desired consistency.
Serving
  1. Top with fresh basil as a garnish if you desire. Serve it warm and enjoy the delightful combination of flavors!

Notes

For a lighter option, consider using chicken sausage or vegetarian sausages. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Reheat gently in a skillet for best results.
