Ingredients
  

Noodles and Sauce
  • 2 packets ramen noodles (discard the flavor packets)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
Vegetables and Garnish
  • 2 cups mixed vegetables (like bell peppers, carrots, broccoli, or snap peas) Feel free to customize based on seasonal vegetables.
  • Green onions for garnish
  • Sesame seeds for garnish

Method
 

Preparation
  1. In a large pot, boil water and cook the ramen noodles according to the package instructions, usually about 3-4 minutes. Drain and set aside.
Cooking
  1. In the same pot, add the sesame oil over medium heat. Once hot, add minced garlic and ginger and sauté for about 30 seconds until fragrant.
  2. Toss in your choice of mixed vegetables and stir-fry for about 3-4 minutes until they are tender but still crisp.
  3. Pour in the soy sauce, mix well, and let it simmer for an additional minute.
  4. Return the cooked noodles to the pot and toss everything together until the noodles are well coated with the sauce and the veggies are evenly distributed.
Serving
  1. Dish out your ramen noodles into bowls, top with sliced green onions and sesame seeds for that extra flavor and crunch.

Notes

Customize vegetables based on availability. For spice, consider adding chili flakes or sriracha. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for a month.
