Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, letting it hang over the edges for easy removal later.
- In a medium mixing bowl, combine 1 cup of all-purpose flour and 1/4 cup of granulated sugar. Mix well before incorporating the cold, cubed butter.
- Use a pastry blender or your fingers to combine until the mixture resembles coarse crumbs.
- Transfer the crust mixture into the prepared baking dish, pressing it evenly across the bottom.
- Place the crust in the oven and bake for about 15 minutes or until lightly golden.
Filling
- While the crust bakes, whisk together the eggs, brown sugar, corn syrup, melted butter, and vanilla extract in a separate bowl.
- Stir in the chopped pecans.
- Once the crust is ready, remove it from the oven and pour the pecan filling over the hot crust, spreading it evenly.
- Return to the oven and bake for an additional 25-30 minutes, or until set and golden on top.
Cooling
- Allow the bars to cool completely in the pan.
- Using the parchment overhang, lift out to a cutting board, slice into bars, and enjoy.
