- Lightly grease an 8x8-inch baking dish or line it with parchment paper.
- In a large mixing bowl, combine the peanut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smoothly blended.
- Gradually fold in the rolled oats to the peanut butter mixture.
- Transfer the mixture into the prepared baking dish, pressing it down firmly to create an even layer.
- Sprinkle optional toppings like chocolate chips or nuts on top and gently press them into the mixture.
- Refrigerate for at least 2 hours to allow the bars to set.
- Lift them out of the dish using the parchment paper and cut into squares.
- Serve chilled or at room temperature.
Notes
For a nut-free version, use sun butter or seed butter. You can replace half of the rolled oats with crushed graham crackers for a different flavor. Store in the refrigerator for up to one week or freeze for up to three months.
