Preparation
- Preheat your oven to 400°F (200°C).

- Dip each chicken breast into the beaten eggs, let the excess drip off, and then coat it in the breadcrumb mixture.
- Toss the cut zucchini fries in olive oil, salt, and pepper. Spread on a baking sheet.
- Arrange the breaded chicken breasts on the same baking sheet as the zucchini fries.
Cooking
- Bake for about 20-25 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
- Let the dish rest for a few minutes before serving.
Notes
For a crunchier texture, consider using crushed cornflakes instead of breadcrumbs. You can also add Italian seasoning or garlic powder to the breadcrumb mixture for extra flavor.
