Preparation
- Preheat your oven to 400°F (200°C).
- Place the chicken breasts between two pieces of plastic wrap or parchment paper. Pound each breast to about ½ inch thick.
- In one shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper. In another shallow dish, beat the eggs.
Breading and Baking
- Dip each chicken breast into the egg mixture, then press into the breadcrumb mixture, coating both sides well.
- Line a baking sheet with parchment paper. Place the breaded chicken breasts on the sheet and drizzle with olive oil.
- Bake in the preheated oven for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
- Remove the chicken from the oven, spoon marinara sauce over each breast, and top with shredded mozzarella cheese.
- Return the chicken to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.
- Garnish with fresh basil if desired and serve.
Notes
For gluten-free, use gluten-free breadcrumbs. Monitor chicken closely during the last minutes of baking to prevent over-browning. Ensure chicken is pounded evenly for consistent cooking.
