Ingredients
  

Chicken and Coating
  • 4 pieces Boneless skinless chicken breasts About 1.5 pounds
  • 1 cup Italian-style breadcrumbs
  • ½ cup Grated or shredded Parmesan cheese
  • 1 cup Shredded mozzarella cheese
  • ¼ cup Olive oil For drizzling
  • 2 large Eggs Beaten
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • To taste Salt & Pepper
Sauce and Garnish
  • 1 cup Marinara sauce Store-bought or homemade
  • Fresh basil Optional, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts between two pieces of plastic wrap or parchment paper. Pound each breast to about ½ inch thick.
  3. In one shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper. In another shallow dish, beat the eggs.
Breading and Baking
  1. Dip each chicken breast into the egg mixture, then press into the breadcrumb mixture, coating both sides well.
  2. Line a baking sheet with parchment paper. Place the breaded chicken breasts on the sheet and drizzle with olive oil.
  3. Bake in the preheated oven for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
  4. Remove the chicken from the oven, spoon marinara sauce over each breast, and top with shredded mozzarella cheese.
  5. Return the chicken to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  6. Garnish with fresh basil if desired and serve.

Notes

For gluten-free, use gluten-free breadcrumbs. Monitor chicken closely during the last minutes of baking to prevent over-browning. Ensure chicken is pounded evenly for consistent cooking.
