Ingredients
  

For the Soup
  • 1 pound ground beef (or turkey) You can substitute with ground turkey or chicken.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 24 ounces marinara sauce
  • 4 cups beef or vegetable broth
  • 8 ounces uncooked lasagna noodles, broken into pieces
  • 1 tablespoon Italian seasoning
  • to taste salt and pepper
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish

Preparation and Cooking
  1. In a large pot, over medium heat, add the ground beef and cook until browned. Drain any excess fat.
  2. Add the diced onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is translucent and fragrant.
  3. Stir in the marinara sauce and broth, mixing well until combined.
  4. Break the lasagna noodles into smaller pieces and add them to the pot along with the Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 15-20 minutes, or until the noodles are tender.
  5. Before serving, stir in the ricotta cheese and sprinkle with shredded mozzarella until melted and bubbly.
  6. Ladle the soup into bowls, garnish with fresh basil, and enjoy your warm bowl of goodness!

Notes

Leftover Easy Lasagna Soup can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, it can be frozen for up to 3 months. Thaw overnight in the refrigerator and warm on the stovetop, adding a splash of water if it thickens too much. Ingredient substitutions are possible for personal preferences.
