  • 1 medium-sized zucchini, diced
  • 1 medium-sized sweet potato, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil for sautéing
  • 1 teaspoon smoked paprika for flavor
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Preparation
  1. Begin by dicing the sweet potato, zucchini, and chopping the onion. Prepare the garlic by mincing it, and set everything aside.
Sauté the Onion and Garlic
  1. In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and cook until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
Cook the Ground Beef
  1. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, approximately 5-7 minutes. Drain any excess fat if necessary.
Add Vegetables
  1. Once the beef is cooked, add the diced sweet potatoes to the skillet. Sprinkle with smoked paprika, salt, and pepper. Stir well to combine.
Simmer
  1. Lower the heat, cover the skillet, and let it simmer for about 10 minutes, allowing the sweet potatoes to soften.
Incorporate Zucchini
  1. After 10 minutes, add the diced zucchini to the skillet. Stir everything together and cook for another 5-7 minutes, until all vegetables are tender.
Garnish and Serve
  1. Remove the skillet from the heat, garnish with fresh parsley, and serve right from the pan for an effortless family meal!
