  • Salt and Pepper to taste for seasoning
For Spicy Mango Lime Coulis
  • 1 ripe mango, peeled and diced
  • 1 lime lime juice
  • 1 tablespoon honey optional for extra sweetness
  • Chili Flakes a pinch for added spice

Preparation
  1. In a mixing bowl, combine olive oil, minced garlic, lime juice, cayenne pepper, salt, and pepper.
  2. Add the shrimp to the marinade, ensuring they’re well-coated. Allow to marinate for about 15 minutes.
  3. In a blender or food processor, combine diced mango, lime juice, honey (if using), and a pinch of chili flakes. Blend until smooth.
  4. Heat your grill to medium-high and lightly oil the grates to prevent sticking.
Cooking
  1. Skewer the shrimp if desired for easier handling. Grill shrimp for about 2-3 minutes on each side or until they turn pink and opaque.
  2. Remove shrimp from the grill, drizzle with spicy mango lime coulis, and enjoy!
